A serious, uncompromising smoky experience. Built around an elegantly smoky Islay malt matured in refill Sherry butts, the second peated whisky we have used comes from the Isle of Skye. No Name, No. 2 will transport you straight to the peat bogs and malt kilns of Scotland’s West Coast. Weighty on the palate, hugely complex and concentrated, No Name, No. 2 also introduces a degree of delicacy. Our second whisky in the series offers an elegant mix of dried fruit notes, reminiscent of red cherries, and even a floral quality.

Juniper at first on the nose, quite classic, but a structured spice backbone creates depth and complexity. Angelica, coriander and a bit of citrus. The palate has a distinctive creaminess to it, with a thick, rich viscosity. The base spirit itself has a nice texture, but it’s the flavors which make it. First a bit peppery, with juniper and lemony citrus fading into a long rich finish of pine-laden juniper, orange zest, pumpkin pie spice and licorice adding a hint of faint sweetness. The botanicals are richly colored, and balanced with a slight deference to citrus; however, still it feels nicely crafted and classic in construction.

Hints of playful pine immediately greet you on the nose.  Muscular lemon oil builds out most of the aroma, with a dash of licorice root for good measure. The palate is creamy and unctuous. Early on citrus oils and mild sweetness hold court, before the flavor unfolds. Hayman’s Old Tom Gin segues seamlessly into juniper custard with a hint of baking spice, and then into earthy almost chewy licorice root.

The base spirit is made with a combination of over 30 different cider apple varieties, and the botanicals are inspired by the aromas of Calvados (apart from juniper). These botanicals include lemon, ginger, rose, cardamom, cinnamon, vanilla and almond. This particular expression has even enjoyed a finishing period in Calvados casks.
